Shrimp Ceviche Tostada -- This was a DELICIOUS recipe -- SO, so good...cannot say that enough. I subbed EVOO for the mayo because we prefer our ceviche lighter and not creamy. I served it w/ homemade tortilla chips and crackers (when the tortillas ran out!), and it was just so fun and tasty. Shrimp took SOOOO much longer to cook though!!! Will definitely give myself EXTRA time on this, and also make sure my shrimp is COMPLETELY thawed next time!!
