I got this recipe out of a Taste of Home book last summer and I love this recipe. I made it for a BBQ and my daughter requested it as a birthday cake. Ive also used strawberries and blueberries for 4th of July celebration. The recipe recommends slicing the cake with a serrated knife. To split the cake into three layers I use dental floss - Makes a nice clean cut.
Microwave Jam: Berries. Sugar. Lemon juice. A microwave. Yes, it's that easy - no giant pots, wax sealing or messy stovetops. The recipe as given made a generous half cup of jam - enough for breakfast for a couple of days. I cut down the sugar to a scant 1/3 cup and lessened the suggested cook time by 2 minutes and the jam set overnight in the fridge. 8 minutes in the microwave, an overnight cooling in the fridge and fresh jam. Not too shabby ,)
