Raw Carob Vanilla Mint Cookies Process into a dough:  1 cup soaked Zahidi dates (when using Medjools, you don't have to soak them)  3/4 cup unsweetened dried coconut   3/4 cup raw sesame seeds  1/3 cup raw carob powder 1/4 tsp. alcohol-free mint flavoring (Whole Foods)  1/4 tsp. ground vanilla  Roll the dough out between wax or parchment paper. Press into desired shapes. Dehydrate at 115 degrees for 15 hours
