Grilled Mediterranean Veggie Wrap. Cut and saute veggies, onion, zucchini, peppers, mushrooms, garlic. Season with minced garlic/onion, or whatever you like. toss onto wrap, add cheese..I used goat cheese as I have a small obsession with it. Fold and hold together just long enough to get it into a panini grill press. Grill for 5-7 mins or until you think its done. I was starving, so I didn't leave mine on very long... just enough so that my sloppy wrapping skills wouldn't fall apart on me.
