Winter Minestrone Soup - I made this from Ina Garten's new cookbook "Foolproof". I opted to make it vegetarian, so I didn't put in the bacon. It is a weekly MUST in our house now. My Husband, Sister, Cousin...they all think I am a SUPERSTAR! Once you prep all the veggies, it is EASY and so delicious!! I would guess it freezes well, but there is never any leftover. Enjoy!
