Bread (from scratch) - 2 eggs, 1 cup of sugar, 1 cup of milk, 3 tbs. of oil, 3 cups of self-rising flour, 1 cup of blueberries. Beat eggs and sugar. Add milk, oil, and flour. Fold in berries. Spray loaf pan. Bake at 350 degrees for 50 � 60 minutes.
A big ol' bowl of gluten free flours, flaxseed, soymilk powder, soy protein isolate and chia seed was my baking medium today. I've been working on a GF, dairy-free and corn-free bread that didn't taste like cardboard and was nutritionally dense for a client of mine, and I think I have a winner in this one! No gums in this baby either, and I beat in some soaked quinoa for extra texture and flavour.
