Awesome Hummus Garbanzo beans or Chickpeas! Due to the presence of the high fiber content, chickpeas are very beneficial for people suffering from insulin-resistance diabetes or hypoglycemia. This is done by preventing the sudden spike of blood sugar levels, which occurs after a meal.
Vegan Bananas Foster Baked Oatmeal; made this for the Family Easter Brunch and everyone loved it. Some things I did different from the recipe: used walnut oil instead of coconut oil and less of it (cut by 1/2), made up for the missing coconut oil by adding Coconut Rum instead of Kahlua. Next time I will use pecans instead of walnuts. Really turned as as perfectly as it is described.
Crock Pot Apple Crisp - Place 2 sliced apples, 1/4 cup brown sugar, 1 tsp cinnamon, and a pinch of salt in the bottom of the crock pot. Pour in 2 cups oatmeal, 2 cups milk and 2 cups water. Do NOT stir. Cook overnight for 8 - 9 hours on low.
