Blueberry Flax Microwave Muffin    Mix ¼ cup oats, 1/4 cup fresh or frozen blueberries, 1 tsp baking powder, 2 tbsp ground flax, 2 tsp cinnamon, 2 egg whites, and a sprinkle of sugar (or other natural sweetener) in a microwave-safe bowl. Cook in the microwave for 1 minute (or longer if the muffin hasn't "puffed" up yet). Let cool, top with a dollop of yogurt & a sprinkle of blueberries!
