Cajun Crawfish and Shrimp Etouffe: This dish is EXCELLENT and has become my favorite meal to make in recent months. I substitute lump crab for crawfish (just easier to find in the midwest), and butter for oil in the roux (you hafta watch it, but it makes a big difference). You can also use clam juice if you can't find fish stock. This dish has a lot of heat so add the cayenne pepper to taste.
