Chicken meatballs. These are EXCELLENT! Easy to make. 1lb Ground chicken, one egg, 1 cup Parmesan cheese (grated not shredded), 6-8 leaves chopped fresh basil, 3 sprigs fresh oregano, 1 cup Panko bread crumbs and a tablespoon of olive oil. Salt & Pepper. Mix chicken,egg,herbs, 1/2 cup of the Parm. Spray a muffin tray and roll up the meatballs. In a small bowl mix the breadcrumbs and remainder of cheese with alittle olive oil. Top the meatballs and bake *350 30-45mins.
