Ingredients:
750g sweet potato, cubed
1 tsp garlic powder
1 tsp sea salt
2 tbsp olive oil
Black pepper to taste
120g baby arugula or spinach
⅓ cup pine nuts
¼ cup pomegranate arils
120g soft goat cheese
¼ cup thinly sliced red onion
Vinaigrette:
60ml olive oil
40ml balsamic vinegar
3 tbsp wholegrain mustard
2 tsp honey
