Prawn betel leaf wraps (miang kham) | This popular Thai street food can also be found in Laos. Designed to be eaten in a single bite, each wrap contains a sweet, salty, sour, spicy and crunchy filling of tamarind sauce, chopped raw onion, ginger, chilli and crushed peanuts. This dish is sometimes also presented deconstructed for people to make their own wraps. There are versions with dried prawns or chopped fried fish, but we’ve used cooked prawns.

Spiced pork with green mango (wettha thayet thi chet) | Appearing widely in our research for this dish, the following rhyme is a neat summary of Burmese cookery: ‘Of all the fruit, the mango is best; of all the meat, pork is best; and of all the leaves, lahpet’s (fermented tea leaf) the best.’ Mango is used in this pork curry to add flavour and to help tenderise the meat, while shredded green mango also makes a piquant accompaniment as a salad. Miang of river prawns and pomelo (miang som oo) | This popular Thai street snack is designed to be eaten in a single bite – the salty, sweet, sour and spicy flavours combining in one sublime hit. At its simplest, miang is a snack of dried prawns, shallots and ginger mixed with tamarind and palm sugar, but the variations are endless and the one I choose depends on what’s good at the market and the mood I’m in.

Hot and sour fish curry (gulai tumis ikan) | Like all curries, this recipe begins with a great curry paste. The heat in this Malaysian dish comes from the chillies in the paste as well as the Vietnamese mint, which is peppery. Tamarind concentrate takes care of the sour component.

I'm crazy about this Thai-Inspired Ground Turkey Larb Salad. Larb is a sweet-sour-spicy Thai salad that's loaded with flavor and this version is really good. The salad has a very small amount of brown sugar but I used Stevia granulated for a lower-carb version; take your choice on that. [from KalynsKitchen.com]
