Roasted shrimp with rosemary and thyme. This was SO good. Probably the best shrimp I have ever had. AND I made it with the frozen bagged shrimp, no need to spend more for fresh. Paired with asparagus with a lemon vinaigrette and lemon and thyme orzo. Delicious (and easy!) Lent meal!
BLT Pasta Salad - 1lb cooked & cooled rotini pasta, 3 diced celery, ½ diced red onion, 1½ C cherry tomato-cut in half, 15 slices pre-cooked bacon-cut into pieces. Dressing: 2 C light mayo, 3 Tbs sugar, 2 tsp white vinegar, 1 Tbs parsley, 1 Tbs onion powder, Salt & pepper: Combine dressing ingredients. Add in the rest of the ingredients & mix well.
A quick shrimp stew cooked in a tomato coconut broth with a hint of lime and cilantro. Simple enough to make for a weekday dinner yet sophisticated enough to serve to company.
