Brazilian Shrimp Soup: used parsley instead of cilantro, can diced tomatoes, vegetable broth instead of water, added fresh sliced okra, and served soup over top of rice. Will try chicken broth and fresh spicy peppers next time.
Fish soup. Our family is crazy about this soup. My daughter especially! She loves Sole and Swai fillet and either one is perfect to make this soup. Can't be easier to make but so delicious. It's red in color because of the tomatoes. It is lightly sour from the limes, a little hint of spiciness from the chili (or you can make it as spicy as you want). Absolutely love this dish!

Crab & Sweet Corn Soup ~ ~ The great thing about this soup is it doesn't skimp on the crab in the slightest. I made a crab stock with the spent crab shells. I used a recipe from Epicurious. If you are looking for a soup with the strongest possible seafood favor I would suggest swapping out the extra water added in the recipe for bottled clam juice. Lastly, this soup was made for dunking crusty bread into. We devoured almost an entire baguette while eating this soup.
