Pesto Quiche With Sun Dried Tomatoes:  I used frozen vegetables & mozzarella cheese & added a little more cheese to the top about 10 minutes before it was done. I did not use the sun-dried tomatoes or a pie crust (just a glass pie plate).

Spaghetti Squash Casserole - made with zucchini, mushrooms, ground turkey and lactose free cheese - so FREAKIN good!

Spinach and Artichoke Dip: Warm 28oz of artichoke hearts and 16oz frozen spinach (sprinkled with a bit of salt) on medium heat. Grind 1 Cup roasted/unsalted cashews into flour, then add about 2 Tbsp Olive Oil until mixture becomes creamy. Drain spinach/artichokes and transfer to a large bowl. Add cashew mix, along with 1 Tbsp Garlic powder, 1 tsp Onion powder, 1 tsp dried Basil, 1 tsp Sea Salt, 1/2 tsp Black Pepper (optional: 2 oz room temp Goat cheese). Mix and enjoy!
