Family meals: Easy fish pie

This went down a treat. At first I thought I was pushing it with spring onion and mustard but neither overpowered the dish. It's worth getting Maris Piper potatoes instead of plain white potatoes for a lovely fluffy topping. Real comfort food and a blast of Omega 3 too.


Coffee and Walnut Layer Cake

Nigella's coffee and walnut layer cake. Rose like a dream and stayed moist for days. I actually used the cake recipe to make about a dozen cappuccino cupcakes- just topped them with white chocolate frosting (lovely recipe pinned on my board) and sprinkled them with dark drinking chocolate. Heaven!

Beautiful baked Camembert

Preheat the oven to 180ºC/350ºF/gas 4. Leaving it in the box, score around the top of a 250g Camembert about ½cm in and cut off the top layer of skin. Finely slice a peeled garlic clove and poke it into the top of the cheese with a few fresh rosemary tips. Drizzle with a little olive oil then bake in the hot oven for 15 to 20 minutes, or until gorgeous and oozy in the middle.
