Irish Soda Bread 1 1/2 c. white rice flour, 1/2 c. tapioca flour, 1/2 c. white sugar, 1 tsp. baking soda, 1 tsp. baking powder, 1 tsp. salt, 1 egg, 1 c. buttermilk. Preheat oven, 350 degrees. Grease 9 inch round cake pan. Mix dry ingredients. Mix wet ingredients. Combine dry and wet until mixed through. Fold in 2 handfuls raisins. Pour into pan. Bake for 30 minutes or until golden brown and toothpick inserted in center comes out clean. Cool for 10 minutes and ENJOY!!!
