Shugary Sweets: Slow Cooker Chicken Enchilada Soup. I used 3 c chicken broth and 2 c water. I blended the enchilada sauce with a can of diced tomatoes and lime juice in the blender before adding to the soup. Next time I would also add a can of pinto beans. Served with crispy tortilla strips, cheese, sour cream, and avocado chunks.
