Marsala Glazed Winter Vegetables  V       Marsala wine imparts a rich caramel flavor to the vegetables, but you can also use dry sherry. Parboil the vegetables before roasting to soften them so they'll better absorb the flavors of the seasonings. For the best flavor, use freshly grated nutmeg instead of bottled ground.

~ ROASTED CHICK PEAS ~ 1. Rinse the chickpeas and pat dry with a paper towel. Place on cookie sheet.  2. Mist with olive oil and desired spices. Cayenne Pepper, Paprika, Garlic Powder, etc.  3. Put the pan in the oven BEFORE you turn it on.  4. Turn the oven on to 425 degrees and roast them for 45 minutes, stirring every 10 min.  5. Shut the oven off and leave them in there for about an hour and a half and DONE.
