Oatmeal Waffles -I really like to make these and freeze the extra. Pop them in the toaster whenever and you've got a quick breakfast. Did I mention they taste just as good (if not better) than regular waffles.
These waffles are my kids new favorite waffles. They have a light texture and the pumpkin flavor is not overpowering. The serving size is for Belgian waffles, but they will work fine in a regular waffle iron also.
The Farm Girl Recipes: Gingerbread Pumpkin Waffles- these had a great flavor and went together pretty easily but not as crunchy as my favorite overnight ones. May try and modify next time to make a hybrid of the two recipes
