Homemade Pancake Mix: Combine 5 cups flour, 1/4 cup baking powder, 2 T sugar, and 1 t salt. Cut 1 cup butter until mixture is crumbly. Store in an airtight container for up to 6 weeks in the fridge or longer in the freezer. Add 2 cups of mix with 1 cup of milk and 2 eggs. Cook on hot griddle.
