Roasted Fall Vegetables with Lentils has been a favorite of ours this winter. Comfort food filled with flavor, and its really easy. Slice some veggies, put them in the oven, put some lentils in a pot....wait about 25 minutes, and dinner is ready!
Tortellini, Chicken and Garden Vegetable Bake. This can be made up to 24 hours in advance and left in the fridge so all you have to do when you're ready to eat is preheat the oven and VOILA! Dinner! :)
