Creamy roasted red pepper zucchini noodles - I squeezed the liquid out of the zucchini in a dishtowel after letting them release some liquid in a colander. Dish was better day. Sauce a little rich for me.

Cowboy Corn Dip: This is FANTASTIC! Makes a ton though. Made some switches: Instead of the canned corn, I used 2--16 oz bags of frozen corn & added 2 TB of chopped red peppers, instead of sour cream, used non-fat Greek yogurt, and used light mayo.
