I made this lastnight and it was incredible. I doubled the recipe, added a can of black beans, 4 ears of corn(shucked), swapped 1 can of Rotel for fresh salsa and instead of green pepper I used 1 orange pepper, jalapeno and 1 anaheim pepper all chopped.
