My mom perfected her gluten free pancake recipe after my sister and I were both diagnosed with celiac disease. I have yet to taste a better GF pancake! I made these this morning. She uses Pamela's GF baking mix as a base, plus a scoop of french vanilla whey protein, one egg, a couple tbspns of ground flax seed, and any milk of your choice. I prefer vanilla soy, almond or coconut milk. Mix in any type of sliced fruit for a hearty and delicious breakfast!
