3-4 cucumbers 2 green onions ½ cup mint leaves For the dressing: ¼ cup yogurt / thick / 1 clove garlic 2 tablespoons lemon juice 2 teaspoons water 1 teaspoon grated lemon peel Mix in a salad bowl cucumber, onion and mint, cover with plastic wrap, and store in refrigerator to cool. Mix yogurt, garlic, lemon juice, water, lemon rind. Try / test / need for salt or pepper. Chill the dressing for 20 minutes. Pour over salad and serve immediately
