Chicken Fajita Bites (My version of the Pampered Chef recipe) : Preheat oven to 350. Remove seeds from 4-5 bell peppers and cut into boat-shaped slices. Place on a pan and bake for about 20 minutes. Meanwhile, mix 2 cups of cooked chicken (I use left-over crockpot chicken), 1/3 cup mayo, 1 cup Mexican cheese, 1 tsp chili powder, 1 tsp season salt, and 1 chopped onion. Remove peppers from oven and increase temp to 400. Fill "boats" with mixture and top with cheese. Bake for 5 minutes.
