South African Recipes - TOMATO STEW (TAMATIE BREDIE) (Wenresepte 2000 pg. 66) Ingredients: 2 large onions, thinly sliced rings ½ tsp. black peppercorns ½ tsp. cloves ½ cup water 5 tsp. oil 2 pieces cinnamon sticks 2.2 lbs. (1 kg) thick lamb rib, cut in even sized pieces ± 1 inch ginger root, fresh, peeled and chopped fine 2 cardamom seeds (optional) 2.2 lbs. (1 kg) very ripe tomatoes, skinned and chopped 1 green chilli, pitted and chopped (optional) 6 medium potatoes, peeled and halved Salt, pepper to taste Pinch sugar Method: In a large casserole pot, cook the onions, black pepper corns, cloves and water until most of the water evaporated. Add the oil and cinnamon and braise until the onion starts to brown. Add the meat, ginger and cardamom and mix well. Cover and simmer slowly for 30 minutes. Add die tomatoes and chilli and simmer for an additional 20 minutes. Now add the potatoes, seasoning to taste (salt, pepper & sugar) and simmer until the potatoes are done. Tomato bredie is a South African stew, referred to in Afrikaans as 'tamatiebredie', normally made with mutton, is cooked for a very long time, and its seasonings include cinnamon, cardamom, ginger and cloves as well as chilli. It is of Dutch origin. "Bredie" is the Afrikaans word for "stew", but is actually a word of Malaysian origin.
