This homemade Chicken Pot Pie is a comforting classic, filled with tender chicken and vegetables in a creamy sauce, all encased in a flaky, golden crust—perfect for a cozy meal. Preheat the oven to 425°F (220°C). Sauté carrots and celery in a large pan with butter until softened. Stir in flour to coat vegetables. Slowly add chicken broth and milk, stirring constantly until the sauce thickens. Add chicken and peas, and season with salt and pepper. Pour the filling into a pie dish. Place the pie crust over the filling, crimp the edges, and cut a few slits on top for steam to escape. Bake for 30-35 minutes until the crust is golden brown. Let cool slightly before serving.
