Invisible Apple Cake(Gâteau Invisible Aux Pommes) This beautiful French dessert is made by layering a TON of thinly sliced apples in a custard-like batter. The apples almost disappear into the cake, hence the name!It’s somewhat similar to clafoutis, but with a much higher ratio of fruit to batter. This cake is also not too sweet, and it’s made almost entirely with fresh apples!You can serve it with anything from powdered sugar, to whipped cream, to ice cream and/or caramel sauce.

Tarta De Santiago or Spanish Almond Cake is a traditional cake from the north west of Spain that holds a very special place in my heart. It’s super easy to make - only 6 ingredients! And incredibly light and moist. I made this *almost* the traditional way, but added some vanilla extract to enhance the flavour and served it with warm custard because it’s October and that’s what this month calls for!

Ingredients: 1 sheet puff pastry 1 lb peaches 1/3 cup sugar 2 tbsp butter, melted 1 tsp vanilla bean paste/extract Course sugar for sprinkling Powder sugar for dusting Vanilla ice- cream for serving Egg wash: 1 egg + 1 tsp water 1. Wash & slice your peaches and mix them with sugar, melted butter and vanilla and set aside; 2. Lightly roll your puff pastry on a floured surface; add your filling in the centre and optionally arrange them or just spread them; fold the edges and brush eggs; wash & sprinkle coarse sugar; 3. Pop in the freezer for 10 mins to optimize puffing of your dough; 4. Bake in a preheated oven at 400 F for 30 min, broil for 2 mins; 5.
