Spinach Stuffed Pie
Instructions: Preheat the Oven: Preheat your oven to 375°F (190°C). Sauté the Spinach: In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until the onion is translucent. Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly. Prepare the Filling: In a bowl, combine the sautéed spinach mixture, ricotta cheese, feta cheese, grated Parmesan cheese, and the beaten egg. Season with salt and pepper to taste. Assemble the Pie: Roll out the puff pastry or pie crust on a floured surface. Place one sheet in a pie dish, leaving the edges hanging over. Spoon the spinach filling into the crust. Fold the overhanging edges over the filling, or place another sheet of pastry on top and seal the edges.

Ingredients: • 1 lbs 18-20 @lobsterantwhere black tiger shrimp • 4 oz green beans • 1 red bell pepper • 1 can coconut milk • 1 cup pineapple chunks • 3 tbs olive oil • 1 inch knob fresh ginger, grated • 2 garlic cloves, crushed/grated • 3 tbs red Thai curry paste • 1/2 lime, juiced • Basil leaves • Cilantro • 2 tsp salt • 1 tsp cornstarch + 1 tbs water • Black pepper, to taste Coconut rice: • 1 cup jasmine rice • 1 cup water • 1/2 cup coconut milk • 1/2 tsp salt Method: • 1. Add coconut rice ingredients to a rice cooker and set
