The best roasted potatoes! Peel & dice Yukon Gold potatoes (about 1 medium per person). Put in a pot,cover with cold water & season the water with Kosher salt. Bring to a boil, then turn down. Cook until fork tender. Remove & cool on a baking sheet. While your turkey is resting, melt butter (lard, beef fat, duck fat) in a couple large saute pans. Add cold potatoes & saute until crisp on one side, careful not to move them about too much. Place them in a 375 degree oven for about 20 minutes.
Pie Crust - You can't go wrong with this crust, very easy and forgiving! 3 c. flour, 1 c. & 2 T. Crisco or cold lard, 1 t. salt, 1 egg, 7 T. water, 1 T. vinegar. Blend flour, salt & crisco. Blend egg, water & vinegar, mix well. Stir egg mixture into dry mixture. Roll out for crusts. To blind bake, poke holes in bottom & bake @ 400 degrees for 20 min. Otherwise just follow your recipe

Homemade Sopapillas~~ 2 cups all purpose flour~ 1 tsp baking powder~ 1/2 tsp salt~ 3/4 cup hot water~ 2 Tbs lard~ Melt the lard in the hot water; add to dry ingredients; form a dough ball; Let sit 30+ minutes covered. Form 12 equal sized balls. Smash dough ball in tortilla press. Deep fry at 375 until brown and puffy, flip over and brown the other side. Serve hot with honey or cinnamon & sugar
Buttermilk Biscuits...3 cups self rising flour, 1/2 cup lard, pinch of sugar, buttermilk, melted butter. Cut lard into flour, add pinch of sugar and enough buttermilk to form a soft dough, knead in bowl a couple of times (do not overwork) pinch off and roll in floured hands. Place in greased iron skillet or pan and bake at 425 degrees for 14-18 minutes. Brush with butter when done.
