Remove the ribs from the fridge and pat dry with paper towels. 2. **Apply first rub:** Coat both sides of the ribs with yellow mustard. In a small bowl, mix together the onion powder, garlic salt, salt, pepper, and paprika. Rub this mixture all over the ribs. 3. **Apply second rub:** Generously coat both sides of the ribs with your choice of BBQ rub (such as Cape Herb and Spice Texan Rub). Press the rub into the meat lightly. 4. **Bake uncovered:** Place the ribs on a baking sheet and bake for 3 hours at 150°C, uncovered. 5. **Prepare the foil packet:** While the ribs bake, prepare a large piece of heavy-duty aluminum foil. In the center, layer the brown sugar, butter, and honey. 6. **Wrap the ribs:** Once the ribs have finished their first bake, remove them from the oven. Carefully transfer the ribs onto the foil mixture. Add the same brown sugar, butter, and honey mixture on top of the ribs. Fold the foil like an envelope, sealing the ribs tightly inside. 7. **Add lager and bake:** Pour the lager into the foil packet, making sure it’s well distributed. Seal the packet tightly, then bake for an additional 2 hours at 150°C. 8. **Add BBQ sauce:** After the 2 hours, remove the ribs from the oven.
