Here's a new twist on what can be boring old potatoes as a side dish. These are called English Roast Potatoes. Partially boiled potatoes are then cooked and sort of fried in the oven in bacon grease. They are divine! ENGLISH ROAST POTATOES 2 1/2 lbs potatoes, peeled and cubed 4 C (or more) chicken stock 3/4 C bacon grease Salt & pepper, to taste Put the potatoes in a pot and cover them with chicken stock.
