Books Here---> http://amongfriends.us/GeorgeStella.php BLUEBERRY BREAKFAST PAN BREAD Recipe courtesy George Stella / StellaStyle.com Prep Time 10 min/Cook Time 25 min/Serves 6 SHOPPING LIST cooking oil spray 1 cup Blanched Almond Flour 1⁄2 cup sugar substitute 1 1⁄2 teaspoons baking powder 3 large eggs 1⁄2 cup heavy cream (may use unsweetened almond milk) 1 teaspoon vanilla extract 1 tablespoon fresh ginger, peeled, minced and sprinkled with a teaspoon of sugar substitute 1⁄2 cup fresh blueberries (may use frozen) SPECIAL EQUIPMENT: 8 inch oven proof frying pan (may use 6 cup muffin tin) directions 1. Preheat the oven to 375 degrees F. 2. Spray the fry pan with the cooking spray. 3. In a larger bowl whisk together the 1 cup almond flour, sugar substitute and baking powder. Add the eggs, heavy cream, vanilla and minced ginger(sweetened with 1 teaspoon sugar substitute), and continue to whisk until completely blended. 4. Fold in the blueberries, pour the batter into the prepared pan and bake for about 25 minutes until the top starts to brown. The pan bread is done when lightly browned and a toothpick inserted in the center comes out mostly clean. 5. Remove the pan from the oven and let cool for at least 5 minutes. Carefully loosen the bread around the edges with a spatula, cut into 6 pieces and serve warm with a pat of butter or cream cheese! George’s Tips: Frozen blueberries work just fine for this recipe but use them frozen right into the batter. If thawed they will fall apart and turn the bread completely blue. Books Here---> http://amongfriends.us/GeorgeStella.php --------------------------------------- ULTIMATE MOCK MAC AND CHEESE CASSEROLE with Broccoli, Chicken, and Bacon Recipe from “THE COMPLETE LOW-CARB COOKBOOK” 2014 by George Stella Prep Time 20 min / Cook Time 20 min / Serves 8 SHOPPING LIST Nonstick cooking spray 1 large head cauliflower, chopped 1 cup chopped broccoli 1 cup cooked chicken, cubed 3⁄4 cup heavy cream 4 ounces cream cheese, sliced 1 1⁄2 teaspoons Dijon mustard 1⁄2 teaspoon kosher salt 1⁄4 teaspoon ground black pepper 1⁄8 teaspoon garlic powder 2 cups shredded Cheddar cheese, divided 6 ounces cooked bacon, chopped 1.Place the rack in the center position and preheat the oven to 375°. Spray a 9x9-inch casserole dish with nonstick cooking spray. Bring a large pot of salted water to a boil. 2.Cook the cauliflower and broccoli in the boiling water for about 5 minutes, or until crisp yet tender. Drain well; pat between layers of paper towels to dry, and transfer to the prepared baking dish, along with the cooked chicken. 3.Bring the cream to a simmer in a small saucepan and whisk in the cream cheese, mustard, salt, pepper, and garlic powder. 4.Stir in 1+1⁄2 cups of the cheese and whisk for just a minute until melted and combined. Remove from the heat and pour over the ingredients in the casserole dish. 5.Sprinkle the cooked bacon over all, top with the remaining 1⁄2 cup of Cheddar, and bake for 15 minutes, or until browned and bubbling. Let cool for 5 minutes before serving HELPFUL TIPS Chunk baked ham may be used in place of the chicken, and try using Swiss or gouda cheese in place of the Cheddar for a completely different casserole! Books Here---> http://amongfriends.us/GeorgeStella.php PAN FRIED PIZZA CHEESE Recipe courtesy George Stella / StellaStyle.com Shopping List 1⁄4 cup shredded mozzarella cheese 1⁄4 cup shredded provolone cheese 1⁄8 cup shredded Swiss cheese (or 1 slice) 1⁄4 teaspoon dry oregano leaves 1⁄8 teaspoon kosher salt 1⁄8 teaspoon garlic powder SPECIAL EQUIPMENT: 8 inch nonstick fry pan Directions 1. Set the stove burner to medium or number 5 on the dial. 2. Evenly add the 3 cheeses to the center of the pan in a thin layer leaving an inch or so space around the inside so you can flip the fried cheese later. 3. Next sprinkle the cheese evenly with the oregano, salt and garlic powder and place the pan over the heat. 4. Cook the cheese for about 3 minutes until the bottom of the cheese when lifted at the edge to check is a golden dark brown. 5. Carefully flip the fried cheese and cook for an additional 2 minutes. Remove from heat, flip right side up onto a paper towel or napkin to drain excess oil and immediately cut into 8 wedges. Books Here---> http://amongfriends.us/GeorgeStella.php ----------------------------------------------------- Chicken with Bacon, Tomato, and Thyme Recipe from George Stella / StellaStyle.com Prep Time 15 min / Cook Time 40 min / Serves 4 Shopping List 8 slices bacon 4 boneless, skinless chicken breasts 1 tablespoon olive oil 1 teaspoon minced garlic 1⁄8 teaspoon salt 1⁄8 teaspoon black pepper 2 Roma tomatoes 2 tablespoons chopped red onion 1 bunch fresh thyme 1. Preheat the oven to 400 degrees and then partially cook the bacon by laying the slices on a baking sheet and baking for about 10 minutes. Transfer bacon to paper towels to drain. (You may use pre-cooked, store bought bacon and skip this step, though I find them thin and overly smoke flavored.) 2. Place chicken breasts in a large bowl and cover with olive oil, garlic, salt and pepper. Toss all to coat. 3. Transfer coated chicken breasts to a clean baking sheet and wrap each in 2 slices of bacon. The easiest way to do this is to crisscross the bacon, forming an X across the top of the breast, and tucking the ends of the bacon underneath the breasts. 4. Cut ends off Roma tomatoes and discard. Then cut each tomato into 2 thick slices. 5. Sprinkle chopped red onion evenly over chicken breasts, and then top each with a large sprig of thyme. Place 1 slice of the tomato in the center of each breast to hold the thyme in place. Bake in the 400 degree oven about 30 minutes, or until chicken is thoroughly cooked with an internal temperature of at least 180 degrees. George’s Tips | Gently pull the sprigs of thyme out from under the tomato before eating. I simply explain this to my guests after serving, as they make a far nicer presentation intact.
