Basic All-Purpose Ricotta Crepes
I've heard of these, but I've GOT to make them soon! 1/2 cup (124g) ricotta cheese,4 large eggs, beaten, 2 tbsp (24g) 'Swerve' or other sugar equivalent (optional). pinch of salt, 2 tbsp (28g) unsalted butter Add the ricotta, eggs, sugar equivalent and salt into a blender. Blend, until combined and smooth. Set aside. Heat a lightly buttered crepe or Teflon pan over medium-low heat. Depending on the size of the pan, add just short of ¼ cup of batter to the pan, and spread it evenly.

Easy Low Carb Cooking
4 oz. cream cheese 1 egg 4 T. heavy cream 1/2 t. vanilla Pinch of salt 1/4 c. Splenda Soften cream cheese in microwave until not quite melted. Beat egg, cream, vanilla and salt together in a separate bowl with a fork. Add to softened cream cheese. Beat together with fork until most large lumps are smooth. Stir in Splenda, mixing well. Microwave for approximately 2 minutes, or until set like custard.

She uses mustard, but in my opinion, the perfect stuffed eggs recipe is egg yolks, easy on the salt, lots of black pepper, mayo, and curry powder. I eat either one of these or a scrambled egg with cheese on it (plus coffee) practically every day for my low carb breakfast. I hate mornings and its especially nice to have these already prepared in the fridge!
