Quinoa Cakes 2 c cooked quinoa; 2 large eggs; 1 t minced garlic; 2 T grated Parmesan; ½ t kosher salt; ¼ t black pepper; ¼ c chopped parsley; 2 T unsalted butter. In large bowl, combine all ingredients except butter.Heat double-burner griddle, or 2 large skillets, over medium heat. Add 1 T butter.brush to coat. Using ¼ cup measuring cup per cake, drop mixture into pan lightly flatten. Fry until golden-brown, about 4 min per side, adding more butter as needed
"Quinoa Chicken Fried Rice" Easy peasy and for those not used to quinoa, you can't even tell a difference, great recipe if you're just starting with it. I did this veg-ish style, just with egg and veggies, no meat. I get nervous about seasoning asian food, even something as simple as fried rice, but soy, teriyaki, garlic and ginger made for an easy winner. Another boyfriend approved healthy dish!
Beat 5 eggs, add 3 cups riced cauliflower, 1 c diced natural bacon, ½ c. baby spinach, ½ c. onion, ½ ts garlic powder 1 c. goat cheese OR ½ c ccnut cream + 2 Tb lemoin juice, , kosher salt, Pinch cayenne pepper, Freshly ground pepper - BAKE muffins 25 mins
