This is a nice twist on the traditional creamy potato salad. I like this served warm or room temp, but by all means it can be served chilled. It has a nice sweet/tangy vinaigrette with fresh herbs and roasted vegetables. I think you will enjoy it.
So versatile, it could go with fish and poultry! The votes are in I really like the crisp, slightly bitter taste it works well with the fish. Next Time: get actual white wine (do not substitute with cooking wine)
Baked fish with Lemon Butter- For the lemon-garlic butter: cups butter 4 garlic cloves, crushed juice of 2 lemons cream freshly ground black pepper chopped parsley. Hold the capers and maybe the fish hahaha
