Thai Red Curry Chicken (Kaeng Phed Kai) - includes recipe to make the curry paste. DO NOT use 3 tbsp brown sugar - it is WAY TOO SWEET. 3 tsp is more reasonable, I would think, but I have not tried it (and I did not make my own red curry paste).
