Lemony Pea Pesto. Pesto, along with Risotto, is not a noun but a verb at my house. All leafy greens or smush-able vegetables are in serious danger of being whirred with olive oil, walnuts and parm cheese! Pea pesto is deceptively hearty and rich, and works perfectly on pasta or crostini. It does have a tendency to go south after sitting in the fridge, so enjoy immediately!
