Obsessed with cauliflower rice now! And it's so easy to make!  Just chop up a whole head of cauliflower into decent sized chunks and throw it in the blender. Then, fill the blender all the way with water and blend it in 3-5 second intervals until it resembles rice. Then just drain and keep in a sealed container in the fridge!  To cook it you can pan fry it, cook it covered on the stove with a little oil or butter, or cook it in a bowl in the microwave for a minute or 2.
