Ingredients: 1 lb ground chicken or turkey 1 cup chopped spinach (fresh or thawed) 1/3 cup breadcrumbs 1 egg 2 garlic cloves, minced 1/2 tsp Italian seasoning 4 oz mozzarella, cubed Salt and pepper to taste Directions: Preheat oven to 375°F. Mix chicken, spinach, breadcrumbs, egg, garlic, and seasoning. Form small balls, pressing a mozzarella cube into the center of each. Place on a baking sheet and bake for 20-25 mins until golden and cooked through. Ingredients: 3 lb beef chuck roast 2 tbsp olive oil 1 onion, chopped 3 garlic cloves, minced 2 cups beef broth 1 cup red wine (optional, can substitute with more broth) 2 tbsp Worcestershire sauce 3 carrots, chopped 3 potatoes, quartered 2 sprigs fresh rosemary 1 bay leaf Salt and pepper to taste Instructions: Preheat oven to 325°F. Heat olive oil in a large pot and brown the roast on all sides. Remove the roast, and sauté onions and garlic until fragrant. Add broth, wine (if using), Worcestershire sauce, and herbs. Return the roast to the pot. Add carrots and potatoes, cover, and roast in the oven for 3-4 hours until tender. Remove the roast and vegetables. Simmer the liquid to thicken for gravy, and serve.
