A tender, slow-cooked lamb shoulder with a sweet and savory garlic, honey, and mustard glaze, perfect for a special dinner or holiday feast. Preparation: Preheat the oven to 275°F (135°C). Rub the lamb shoulder with olive oil, garlic, rosemary, thyme, salt, and pepper. In a small bowl, whisk together honey and Dijon mustard. Coat the lamb shoulder with this glaze. Place the lamb in a roasting pan, cover with foil, and slow-cook for 3-4 hours until tender. Once done, uncover and increase the oven temperature to 400°F (200°C). Roast for an additional 10-15 minutes to crisp the exterior before serving.
