Roosterkoek are South African yeast dough rolls that are baked over the coals of a barbecue - eaten hot off the grill with plenty og butter they make a delicious addition to any summer braai (barbecue).
Steak & Chips with Garlic Mayonnaise
With National Braai Day coming up on the 24th of September, I thought it would be appropriate to post a recipe for what I'm intending to braai on that day: a perfect steak. Yes, I also love to braai peri-peri chicken, boerewors, lamb chops, snoek and braai broodjies, but to me steak remains the King of the grill.
Braaied tandoori lamb chops
A tandoor is a clay oven traditionally used in Eastern cooking. A fire is made inside the oven and the food is exposed to direct heat. The smoke from the coals or wood, and from the food juices and fat dripping onto the fire, all add to the flavour.
