I’ve acquired a love of North African food after visiting Tunisia and Morocco a few times, so when I was at Le Palmier restaurant in Marseille I ordered both the couscous and the chicken and fig tagine, though traditionally they’re not supposed to go together. Hence this pairing!

One of the highlights of my trip was going to Malbuisson in the Haut-Jura region and trying lots of the local Comté cheese in the local restaurants. The town is well worth a visit. I am not familiar with Alpine places in the summer but, as a restaurateur, I’m quite envious of the fact that it was packed out in June and would presumably be crowded with skiers in winter. This recipe comes from the town of Salers, famous for its cheese. Salers cheese is similar to Cantal but is made only from the milk of the cows grazing on its mountain pastures in the summer. The town itself is extraordinary. No part of France is really that secret, but when I arrived in Salers on a sunny morning it felt like I’d just landed somewhere in Ruritania. This is a speciality of Nice and is filled with Niçoise salad ingredients. A great way to use up slightly stale bread, the recipe contains tuna and anchovies but if you are vegetarian, you could substitute with cheese (such as mozzarella or slices of goats’ cheese) or roasted peppers, aubergines, courgettes and mushrooms. Make this a day ahead and keep weighted down in the fridge so all the juices seep into the bread.
