Ina Paarman | Orange Chicken with Sun-dried Tomatoes
One of those special recipes. Ideal for guests, or to treat the family. The chicken responds well to pre-preparation and benefits from marinating time in the delicious sauce. Oven bake just before serving.
Ina Paarman | Eggplant Involtini
These stuffed sliced eggplant rolls are utterly delectable. One of our very best recipes and ideal for a vegetarian meal. Select biggish eggplants. Serve the Eggplant Involtini with crusty bread and a salad.
Ina Paarman | Pork Kebabs
These traditional kebabs are delicious. It is best to marinate the meat overnight so that it can firm up and in addition, become very easy to thread. We discovered that tenting the kebabs (we used a foil container) while grilling helps to cook the meat and trap the smoke which adds to the flavour. See technique pics at the end of the recipe.
Ina Paarman | Choc-Ginger Special Occasion Cake
This flavourful cake not only looks good, it tastes delicious and is even better the next day! You will need 2 boxes of Cake Mix to make the 3 layers.
Ina Paarman | Smørrebrød
Smørrebrød, or open sandwiches, are easy, healthy, everyday food. They are ingrained in the daily Scandinavian food culture. In Finland most of the women work outside the home, there is no mother or granny cooking elaborate meals. During the week open sandwiches are supper!
Ina Paarman | Lemon Chicken Under a Brick
Another recipe to feature in the repertoire of the traditional South African braai master. This technique allows the braaier the opportunity to show off a little. The brick is fantastic to assist with moisture retention, speeding up cooking and assisting with flavour development. The brief micro cook beforehand guarantees ‘cooked to the bone’ results!
Ina Paarman | Venison Kebabs
Venison is a healthy choice for kebabs. When not available ostrich fillet is an excellent alternative. Instead of kidneys, use mushrooms. The secret of this recipe is the yoghurt based marinade – don’t leave it out! Traditional South African fare at its best!
Ina Paarman | Tipsy Chicken with Grapes
Another recipe that combines sweet and savoury flavours traditionally loved by South Africans. A classic roast chicken with a twist. The roasted grapes are delicious and the gravy is to die for. Also excellent served cold the next day. If serving cold, carve the chicken, bring the gravy to boiling point and pour the warm gravy all over the cold chicken. Especially good to moisten the breast meat.
