Healthy Eating on Instagram: "Pasta Roasted Pepper & Tomato Sauce by @dr.vegan  Ingredients: * 8 oz pasta * 2 cups cherry tomatoes * 1 red bell pepper, diced * 1 small onion, chopped * 3 cloves garlic, or more * Handful of fresh basil * 1 tsp dried oregano * 1/2 cup vegan ricotta or cream cheese * Salt, black pepper or chili flakes * Olive oil * Pasta water  Instructions: * Roast Veggies: Preheat oven to 400°F. Toss tomatoes, bell pepper, onion, garlic and add some olive oil. Cover with aluminium foil and roast 20-25 mins. Remove the foil and roast for another 10 mins. * Blend Sauce: Cool roasted veggies, then blend with basil, ricotta/cream cheese, pasta water and the seasoning to creamy consistency. * Combine and Heat: Heat blended sauce in a pan, with the cooked pasta.
