The best smelling ferment you’ll ever make

This ferment makes two foods, a beautiful, fermented strawberry to add into coulis, jam, tarts, and desserts, as well as a fermented honey, infused with pure strawberry aroma that can be used in cookery and drinks, both hot and cold. 

The recipe:

300g honey
240g water
180g strawberries
16g salt

1. Mix all the ingredients together and weigh down the strawberries.

2. Secure with an airtight lid or airlock and ferment for 7-8 days at room temperature (20-25c or 68-77f). Make sure to open the jar daily to release pressure.

3. Once the strawberries become less buoyant, mush them up a little to aid infusion. 

4. Once fermented, filter the strawberries and save them for coulis, jam, Fermented Oranges, Healthy Dressings, Homemade Extracts, Lacto Fermented, Grapefruit Recipes, Fermented Honey, Healthy Dressing, Make Drinks, Spring Afternoon
