Low sugar high fiber rusks

I love rusks, but after you have made them a few times and realise how much sugar and fat go into them, you feel more and more guilty about eating them. I have experimented with many so called ‘healthy’ recipes and in my experience if you drop the fat content too much the rusks end up super hard. But I have successfully reduced the sugar in this recipe by 80% and added lots of fibre rich ingredients making it tummy friendly. And there is no compromise in flavour! The whole family will love…

Stien Rust Karringmelkbeskuit (Ma Joyce) 3 pakke SR meel (1,5 kg) 1½ koppie suiker 3 eiers 500 gr smeer 1 teelepel koeksoda 1 teelepel cream of tarter ± 2 koppies karringmelk sout na smaak Vryf smeer in meel en cream of tarter. Meng suiker, eiers, sout en 1 koppie karringmelk. Maak meel aan met mengsel. Smelt soda in ander koppie karringmelk en voeg by. Knie goed. Bak ¾ uur in matige oond by 400°F/200°C (5-6 gas). Laat afkoel en droog uit. (Ek bak myne op 180°C, want die 200 is vir my te…

Health Rusks

I just love rusks! Most of you probably won't know what a rusk is. The Wikipedia definition for a rusk is a hard, dry, biscuit or a twice baked bread. I would say it is very similar to a biscotti, but not as sweet! We eat our rusks after we have dipped it in a cup of hot tea or coffee! Rusks can be eaten for breakfast as a late morning or afternoon snack, or even when traveling when you stop for a coffee or tea break.
