Somehow I always feel a bit less guilty when indulging in carrot cake instead of chocolate cake, or any other cake for that matter. The goodness of the carrots, raisins, dates and pecan nuts surely is very good for me, I& tell myself.
This is, hands down, the BEST banana cake I've ever had. It's soft, fluffy, moist and rich all at the same time! Once cooled this cake is topped with a totally irresistible lemon cream cheese frosti (Cool Desserts)
